I found my new favorite organic food store with many delicious ingredients, medjool dates, dried fuits, coconut flour, chia seed…etc.

Here you can find two recipes, about an amazing coconut bread and my “fake” shakshuka. Enjoy Honey!


Coconut bread

  • 1/2 cup coconut flour
  • 1/2 cup shredded coconut
  • 1 zest of lemon
  • 3 eggs
  • 1 cup yogurt or coconut creme
  • 1/4 cup of maple syrup
  • 1 pinch of salt
  • vanilla extract
  • 1 ts baking soda

Separate the eggs first, make a hard foam with the white ones added one pinch of salt, mix the yellow part with the maple syrup and yogurt, vanilla. Add the dry ingredients to the mixture and then with big, slow moves add your foam.

Bake for 35 minutes first at 175°C and then for additional 10 minutes but covered with a foil. You can enjoy with home made nutella, sugar free jam or just with butter.

Shakshuka

Let you introduce my fake shakshuka, yes…because i use eggplant instead of paprika. I like how creamy it is that way.

Recipe for about one person

  • 1/2 eggplant
  • 2 tomatoes
  • 2 eggs
  • 1 small head of onion
  • 2 cloves of garlic
  • salt, pepper, paprika
  • 1 small can of concentrated tomato
  • 3 tbs olive oil

Cut the eggplant into small cubes, the onion into small pieces with the garlic. Put the olive oil to your pan and when it’s hot enough add the onions, garlic then the eggplants and the spices. With covered cook the eggplants until they’ll become soft. In the meantime cut the tomatoes into half and using a cheese grinder grind the tomato’s inside to a small bowl. When the eggplant is limp enough add the tomato and the concentrated version and cook it for additional 4-5 minutes.

Then put the eggs and cover your pan until your shakshuka is ready.
